is there going to be a way to create layouts with the pt3hud that look like pahud layouts?

i think this is probably something that alot of people would like to see.

Yes, you can already do this - just create a Group for each statistic.

i dont like the grey box tho... i just want my stand alone numbers back...

Ah, yes - I believe transparent backgrounds are on the list too.

i would also like to see the same font as pahud , and the ability to color code..

You can change fonts and colours. PT-icon->Configure Stats.
If you mean colour ranges based on stat values, you can do this too - on the Stats tab see bottom right for the "Color Ranges" tab.
You can do more advanced colouring using Custom Stats within the main app.
