Your old HUD stats should be in the Layouts.pt3 file in the C:\Program Files\PokerTracker 3\Data\ directory unless you installed PT3 to a different directory. Beta 25 may move the location of your stats around the first time (though they should save afterwards), but it shouldn't destroy any HUD data. That said, if you could please attach that layouts file to a support ticket we'll look into what can be recovered.

There isn't an easy way to limit opponent's stats to just this session. You could use the "display information from last X hands only" if you'd like, but that will give you data across several sessions (though if you had it to last 50 hands or something, it would all be pretty recent).
