Just wondering if I am able to customize my hud stats so that i can see various stats at various effective stack depths

ie 3bet shove % 20-25bb ef stack
3bet shove %15-20% ef stack

You can't do that with HUD filters, but it is possible with custom stats using the database field "holdem_hand_summary.amt_p_effective_stack".

Check out the Tutorial: Custom Reports and Statistics which also has a section on making a new version of an existing stat.
