Is it possible to delete all custom made stuff at once?

Yes, if you remove the StatDefinitionsCustomized file from the User Data Folder's Data subdirectory when you restart PT4 you'll have a completely blank slate. To open the User Data Folder click File --> Show User Data Folder in the main PT4 window.
