I would like to be able to create a custom stat that sums up the allin_equity on each street and then I would diplsay it on the Overlay Stats.

Calculating the All In Equity and then the actual Equity for a projected and actual %.

Do these stats have street designations for specific calculations?

Equity is only stored in the database at the time of the all-in; it is not stored street-by-street.

So I could reverse the process by elliminating streets in Quick Filters to get each one?

If you created a custom stat which filtered for all-ins by street you could do it that way but realize that if you go all-in preflop and see that equity value that number won't change based on the board cards - we only store the equity at the time of the all in.
