E' possibile resettare tutte le statistiche e di conseguenza grafici personali? se possibile come faccio?

You can create a new database via Database -> Database Management -> New and set it to active and default and then delete the old database. This will start totally over from scratch for you and your opponents. If you just want to filter the data on yourself to see more recent data, you should do that using the date filters in the sidebar instead.
