Hi,
Make sure that there is enough sample hands on a player so that notes are written. Most notes need a few instances of the specific spot happening before displaying, usually like 5.
If you installed one of the NCE packs you have the information for each definition in the "Notecaddy coaching pack files" created in your desktop. Inside there are some .pdf files that explain and go in detail about the inputs of the definitions.
After making sure that all hands are processed for notes in your database you can have a look at the player you have the most hands on, replay a few hands from him and check if the HUD on that specific player has the Notecaddy notes showing as it should.
A minimum of 200 should already produce enough notes to know for sure if its working.
Start with preflop and flop definitions. Those produce a lot more notes than river notes in example.
