Is this correct?
Or is it only that the handgrabber doesn't work on a Mac, so I could just import the hands for analysis after the fact?
Thanks

Yes. The hand grabber that isn't available on Mac OSX due to the way that operating system works but you can still manually import downloaded hands from your Ignition/Bovada client into PokerTracker 4 using 'Play Poker -> Get Hands From Disk':

So are there any US-facing sites that you can use with a Mac if you want to get the hands live and use a HUD?

If you are not in a state with its own poker sites such as New Jersey then sites on the Winning Poker Network (Americas Cardroom, Black Chip Poker) may be available to you. Another option is to use a virtual machine on your Mac which would allow you to use applications such as the Hand Grabber that can only be used on Windows.
