That's fine - postgres opens multiple instances to deal with the requests.
There will always be at least 6 of them even if postgres is 'idle'.

I'll check elsewhere on the forum to see if someone has dealt with the question of just disabling postgres unil I'm actually using Poker Tracker. Otherwise, according to TUT (the ultimate troubleshooter that I use), These 6 instances of Postgres are occupying a little over 43Mbyte of memory. Task manager does show that they are inactive, but still - that's a big hunk of memory taken when there's nothing going on. I run some CAD packages that could use this memory when I'm not playing cards! Glad I found this post though, I was not sure why there were so many instances.

If you close PokerTracker 3, that memory will be recouped, and if PT3 is not active, you really don't need to worry about that memory as PostgreSQL will relinquish it when requested.

You can set the PostgreSQL service to manual startup instead of automatic, so that it doesn't start when you boot up - then PT3 will start it when you launch PT3.
Control Panel > Administrative Tools > Services; select PostgreSQL Database Server, right click and change startup to manual.
