Which version should I choose to install when reinstalling for use with PT3?

8.3, 8.4 and 9.0 are all supported. If you're on a 64 bit machine, 9.0-x64 is a good choice, otherwise they're all pretty similar.

I'm stuck in the password stage now and not sure what to use for the password

Try dbpass, svcPASS83 and postgrespass - one of those three is the most likely password. If not, the steps you linked will work to remove that user and then you can recreate it during the rnstallation process.
