What are the "*Most Recent 300 Hands" at "Get Hands while playing"

and

how can I fix these (ore another) option at startup ?

The * in front of Most Recent 300 means that it is the value you can set yourself via the <Specify Number of Hands> option. The value after the * will change to the value you put into the specification which should be remembered the next time you start PT4, though we only store one such custom value for you.
